The boys absolutely love Kodiak Power Cakes for breakfast, but I just didn’t feel like standing over the griddle to cook them. Instead, I baked some muffins.
I blended 3 ripe bananas, 1 cup unsweetened vanilla almond milk, 2 tsp. vanilla extract, 2 tsp. cinnamon, and 2 cups of Kodiak Power Cakes mix. Then I stirred in 1/2 cup of dark chocolate chips, divided the batter into 12 muffin tins, and baked on 350* for 25 minutes.
