Oatmeal Raisin Cookies

My kids love oatmeal and I’m glad that they do, but I dread giving it to them because of the mess it makes. Whenever they have oatmeal I end up changing their outfits because they have oatmeal caked on. And my younger one usually ends up with a nice handful in his hair as well. I wanted them to enjoy the healthy breakfast but couldn’t take the mess so I came up with another way for them to eat their oatmeal, in the form of a pancake.

They’re super easy to make as well. I blend 2 eggs, 1 banana, ½ cup rolled oats, 2 tsp. cinnamon, and 2 tsp. pure vanilla extract. Then you can either stir in the raisins or put them on once the mixture is on the griddle (this is how my boys like it because they enjoy the raisin smiley face).

Pour batter into circles on the griddle and cook like a pancake. Your kids can eat them like a cookie so it alleviates the oatmeal mess. You can also get creative with your mix ins and add blueberries or chocolate chips instead of raisins, I stick to the raisins because my boy refer to them as their “oatmeal raisin cookies,” and I’m very okay with that.
